Kinja'd!!!

I think I might have done it.

There is the ever popular method of spreading butter on each slice of bread. But if using real butter you run the risk of obliterating the bread. Some people use mayo but that is... I don’t even know what that is. Some regional nonsense?

My new method(which someone else probably figured out long ago):

Acquire Sourdough Bread

Kinja'd!!!

Because sourdough bread is best bread.

Cheese of Choice

Kinja'd!!!

I went with swiss, but any meltable cheese will do.

Gus likes swiss.

Kinja'd!!!

You can also add other things at this point. I opted for the ever popular “slice of ham.”

Gus also likes ham.

Kinja'd!!!

Something New I Tried

Kinja'd!!!

Horseradish. I love this stuff. My condiment of choice for most occasions. Not necessary for this if you don’t like it.

After this, get your pan hot. A little less than medium heat should be good.

New Butter Method

Kinja'd!!!

Cut off two chunks of better about yay big.

Kinja'd!!!

Then add one chunk to the hot pan. Coat an area large enough to accommodate the surface area of bread.

Throw It In The Pan

Kinja'd!!!

While you wait for one side to brown, cut a tiny sliver of butter and feed it to Gus. Dude is a butter fiend.

Kinja'd!!!

Butter Part Two

Kinja'd!!!

When the one side is done, momentarily remove from pan and add second chunk of butter.

Flip It

Kinja'd!!!

A minute or so like this and you’re ready to go.

Advantage of this method: Butter has not destroyed bread in spreading process. Even distribution of butter. Horseradish is delicious.

That’s how I do it, without the ham. Best method ever.

That’s how it should be done. Although Havarti or Jarlsberg are my go to cheeses for grilled cheese.

Mayo works very much like butter without destroying the bread. Easiest method if you have to make, say, 400 grilled cheese sandwiches.

For an even better method try this. Instead of flipping it, use a bigger pan and put both butter sides down with the cheese on. Once the cheese is melted on both half’s flip one side on to the other of its is done. I work in a restaurant and it is turns out perfect every time when I have to make 10 grilled cheese’s at once it is much more efficient.

Like this, but with less cheese.

Kinja'd!!!

At home I use Goat Cheddar (I’m lactose intolerant), use a nice rye bread from a local bakery, with garlic & onion “Butter”.

Almost perfect... The only thing you need to change is cooking them in a good old fashioned cast-iron skillet!

It is not easy to find. When you do find it, it is not cheap. A local deli has it, but it is $5/100grams. That is avg for a decent goat cheddar.

Best bread choice ever and I can’t believe I’ve never thought of it, so thanks for that! That butter method is best butter method by far, but be careful not to over butter or it will be difficult to brown the bread. I prefer pepper jack, with some chopped jalapenos.

Uh... You can buy Pesto Gouda at Trader Joe’s. You didn’t use that, so clearly this is not a perfect grilled cheese. Otherwise, I like the butter trick, I’ll have to try that next time.

I’m sure if you gave Gus a dab of horseradish he’d look at you like food betrayed him. That’s how Binkie looked at me when she picked up a dropped pretzel dipped in hot horseradish mustard.
